Homemade Granola - Another Camp Favorite (serves 12)
Toast 5 cups of quick oats in a large cake pan in the convection oven at 325 degrees for 10 minutes.
Mix together in a large bowl:
5 cups quick oats
1 cup brown sugar
1 cup flaked coconut
1 cup wheat germ
2 tablespoons ground cinnamon
3/4 cup honey
1 cup vegetable oil
1 tablespoon vanilla extract
2 cups sliced almonds
2 cups raisins
Using hands (gloved is best), mix thoroughly with oats, making sure there are no dry oats. Bake altogether in a convection oven at 325 degrees for 25 minutes, stirring every 10 minutes. Add 2 cups raisins when done. *Keep refrigerated*
